


๐ Ready in 6 mins!! You canโt get more quick and easy than this recipe ๐๐ผ For Christmas I got an herb garden (10/10 would recommend โญ๏ธ) and Iโve been growing my own romaine lettuce. This is much better than buying store bought because it lasts so much longer, itโs always fresh, and I control what itโs grown with! Pairing this fresh lettuce with some blackened shrimp makes for a super quick dinner that everyone will love ๐ย

Ingredients:
6 oz shrimp
Juice from 1/2 lemon
1 Tbsp blackening seasoning of choice (recipe for homemade included)
1 tsp honey
2 oz shredded Parmesan
10 cherry tomatoes
4 romaine leaves
ย Blackening seasoning (makes 8-10 servings):
2 tbsp paprika
1.5 tbsp onion powder
1 tbsp garlic powder
1 tbsp ground thyme
1 tsp pepper
1/2 tsp salt
1/4 tsp cayenne pepper
Directions:
1. Spray pan with olive oil spray and place over medium high heat. Add shrimp (mine was frozen), lemon juice, blackening seasoning, and honey to pan and cook until shrimp is all the way pink (mine took about 4 mins). Stir often to ensure even cooking.
2. Spoon shrimp into lettuce cups and top with Parmesan and tomatoes, and thatโs it! Enjoy! ๐
