Have some leftover chicken or turkey from the holidays?? ๐ŸŽ„ Why not use it to make this classic chicken (or turkey) salad recipe! Perfect for a easy to make, delicious work lunch to help you sneak in some more protein and veggies ๐Ÿ’ช๐Ÿผ๐Ÿฅ• I served mine with toasted Xtreme wellness tortilla chips that I made in the oven, but you could just as easily serve yours with crackers, on a wrap, or even as a sandwich! ๐Ÿฅช

Calories per serving: 218

Nutrients per serving: 31g protein, 5g carbs, and 7g fat


Ingredients:

16 oz boneless skinless chicken or turkey 2 stalks celery

1 carrot

1/2 yellow onion

1/2 cup nonfat plain Greek yogurt

1/3 cup light mayo

1/2 Tbsp lemon pepper

1 tsp garlic powder

Salt and pepper to taste


Directions:

1. Chop veggies finely and make sure to shred chicken (or turkey) well. Then mix all ingredients in a bowl, serve, and enjoy! ๐Ÿ˜‹
