

If you’re feeling a little lazy and want an easy crockpot meal, you can do wrong with this recipe! I love Tex-mex (hands down my favorite type of food) so this week I wanted to try a spin on taquitos 😛 I love the Taquitos at Chevy’s, but ONE serving of the chicken taquitos is ~1000 calories and has 96g carbs 😮 trying lighter versions of your favorite foods at home is a great way to get the same - or an even better - flavor that won’t include all of the hidden calories and sugar 🤗

Calories per serving: 246 cal
Protein per serving: 27 g
Carbs per serving: 24 g
Ingredients:
2 lb pork loin
1/4 cup juice from jalapeño jar
1/8 cup ketchup
1/8 cup mustard
1/2 cup brown sugar
1/4 cup jalapeño slices
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1/2 tsp cayenne pepper
1/2 block light cream cheese
8 whole wheat carb balance tortillas
Directions:
1. Add pork, ketchup, mustard, brown sugar, and spices to crockpot and cook on high for 4 hours or low for 7-8 hours
2. When pork is done, shred with a fork and add cream cheese to pot. Stir well until mixed.
3. Preheat oven to 400 degrees. Spoon 1/8 pork mixture into each tortilla and roll. Place on baking sheet and bake for 10 mins. Remove from oven, allow to cool, and enjoy! 😋
