โš ๏ธ White potatoes often get a bad rep for being โ€˜too high in simple carbsโ€ ๐Ÿง but did you know that a white potato contains nearly half your daily recommended amount of Vitamin C ๐ŸŠ, has more potassium than a banana ๐ŸŒ, contains antioxidants ๐Ÿ“, and has only about 1g of sugar?So enjoy your picnic and eat the dang potatoes ๐Ÿ˜Ž



Servings: 8 (1 serving = ~1 cup)

Ingredients:

3 lbs white potatoes

2 stalks celery

1/2 white onion

3 hard boiled eggs

3/4 cup light mayo

3/4 cup nonfat plain Greek yogurt

1 Tbsp dried dill

1/2 Tbsp white vinegar

2 tsp stevia

2 tsp black pepper

1 tsp salt


Directions:

1. Peel and cube potatoes into ~1 inch cubes. Bring large pot of water to a boil then add potatoes and cook for ~12-15 mins until potatoes are tender.

2. Meanwhile, boil eggs. Then chop eggs, celery, and onions very finely and add to large bowl.

3. Add potatoes and all other ingredients to the bowl, mix well, chill for at least 30 mins and enjoy! ๐Ÿ˜‹
