If you’re looking for an easy and delicious way to incorporate more vegetables into your diet, this sausage vegetable bake is the perfect way! I used chicken sausage instead of regular sausage to add some protein without getting so much saturated fat 🙅🏼‍♀️ I also included some pictures of the cooking process! Servings: 5 Calories per serving: 270 cal Protein per serving: 18 g Carbs per serving: 16 g Ingredients: 16 oz tomato basil chicken sausage 1 green bell pepper 1 red bell pepper 1 yellow bell pepper 3 Idaho potatoes 2 cups green beans 1 Tbsp olive oil 1/2 Tbsp oregano 1/2 Tbsp parsley 1 tsp paprika 1 tsp garlic powder 1 tsp red pepper flakes Shredded Parmesan to taste

Directions: 1. Prepare vegetables by chopping peppers and potatoes 2. Pre-heat oven to 400 degrees. Slice chicken sausage into 1/2 inch slices. Spread all vegetables and sausage on pan and drizzle with olive oil and spices. Mix until spices are evenly distributed 3. Bake for 15 mins, then remove from oven and mix. Place back in oven for 15-20 mins then remove and allow to cool. 4. Sprinkle with Parmesan cheese to taste and enjoy! 😋
